Pasta Salads For Veggie Lovers

 If you are not a vegetarian, I recommend you to clean your body from the meat a little bit by choosing a meal plan, which doesn’t include any meat, at least for a week. You will feel better and lighter. After that refreshing week, start to eat meat slowly. The next week eat no more than three days meat (chicken only), then you can go for your regular consumption of meat. It will be good for your body to clean it this way at least two times in the year. So, I’ll show you three different salads with one main ingredient – pasta. They are nutrient and perfect for lunch or dinner. Combine them with fresh tomato or orange juice. Take a look and choose your favorite one:

Pepper Pasta Salad

As you can guess you will need some peppers. Here are all the ingredients:

  • 1 package of pasta, about 16 ounces, choose the type according to your preferences

  • 2/3 cup olive oil

  • 3 tablespoons of white wine vinegar

  • 2 tablespoons of fresh basil leaves

  • 2 tablespoons of Parmesan cheese

  • Salt, black pepper

  • 3 different peppers – red, yellow and orange.

  • 1 fresh tomato

  • Black olives

  • 8 ounces mozzarella cheese.

You will be ready with the cooking and chopping in less than 30 minutes. Before starting to chop and cut the vegetables and the cheeses, you should cook the pasta. Boil it into a large pot of lightly salted water for 8 to 10 minutes, or as it is written on the package.

Then you have two options: make a dressing out of the vegetables and the other ingredients or chop them into cubes and eat them fresh. It is all in your hands.

Rainbow Salad

  • Again, one package of pasta by your choice, about 16 ounces

  • 2 chopped tomatoes

  • 1 green pepper

  • 1 onion

  • 1 cucumber

  • 1 cup broccoli

  • 1 cup mushrooms

  • Your favorite dressing

  • Black olives

Bring the salted water to boil and pour the pasta in it. Stir until the pasta softens and boil completely. For more precise work, check the instructions at the back of the pasta package. Afterwards, rinse the pasta in cold water and set them away in a strainer and let them dry.

Combine the chopped vegetables and the dressing and mix them with the dry pasta. Mix nicely before serving.

Confetti Salad

This one is a little bit heavier, but as long as you keep the meat away from the daily meals, you are allowed to make a mistake  with one caloric pasta salad once in a week. Check out the needed ingredients:

  • 1 cup mayonnaise (a tempting mistake)

  • 1 tablespoon of red wine vinegar

  • Salt

  • Black pepper

  • Garlic

  • Fresh basil leaves

  • 2 cups pasta

  • 1 tomato

  • Half yellow pepper

  • Black olives

As usual, boil the pasta as the instructions on the package tells you. Then mix the mayonnaise, vinegar, salt, chopped vegetables. Mix all that with the rinsed and dried pasta and let it chill for several hours in the fridge. Stir before serving. Enjoy!
