Being Vegan: Six Great Lunch Recipes

Some people still raise their eyebrows in disbelief when they hear the word “vegan”. There is a large dispute over the idea that a person can live without any meat or dairy products in their diet. However, you should not be deceived: there are tons of other sources of protein which have nothing to do with animals. Whether you go for nuts, legumes, or just the cool soy or tofu alternatives to regular meals, you will not be disappointed either by their nutritious value, nor their taste. Nowadays, you can find every traditional meal in a vegan version: pasta, bread, bacon, burgers, etc. For example, you can start drinking almond or rice milk. We promise you, they are great for you and you will not feel the difference! Overall, eating vegan food is not that hard to begin with. You just need to get into the habit of not grabbing the most traditional meal ingredients and soon, you will be able to think of your own vegan recipes. Take a look at some lunch ideas:

  • Healthy Salad: Salads do not need to be boring or too light to fills us up. A good healthy idea for an unusual salad includes avocado, pecan, mixed greens, maple syrup, walnut oil and beetroots. Cut the beetroots in small pieces, so that they will be cooked quicker. Boil them and cool them. Add all the other ingredients. You can add some flax seeds, cucumbers or lettuce, if you want to have some more things in your plate!
  • Soy Bacon and Spaghetti Carbonara: Are you a pasta lover? Well, there are options for you too! Soy bacon is a great alternative to meat ingredients and can help you make a carbonara recipe of your own. The sauce can be made of soy cream (yes, there is such a thing too!), salt, black pepper and lemon juice. If you like to play with spices, you can add some more to the sauce.
  • Chickpea Casserole with Cream: Sounds delicious, doesn’t it? The great thing about this recipe is you can prepare it for under an hour. It contains everything you want from a healthy nutritious lunch. It is a combination of pasta, nuts, soy milk, chickpeas, onion and spices. It is packed with protein, but still vegan. The taste is amazing, so try it!
  • Mediterranean Baked Sweet Potatoes: Sweet potatoes are a great root vegetable that has often been neglected. However, they are incredibly tasty and healthy, so why not try them out next time you are preparing lunch? Bake them with seasoned, roasted chickpeas, a garlic-based sauce and add some parsley-tomato salad as garnish. Who said potatoes are a boring basis for a meal?
  • Quinoa Wrap: Quinoa is one of vegetarians and vegans’ favorite cooking ingredients. And who does not love a good old wrap for lunch? This is a quick recipe that is quite easy to prepare. Add tofu, quinoa, basil, spinach, cashews, carrots, sprouts or whatever else pops into your mind. Or maybe some pesto or a nice sauce? You can create a great vegan wrap with whatever you find in your fridge and be quite happy with its tasty!
  • Tandori Tofu Pizza: You do not have to miss out on one of the most popular dishes in the world, if you are vegan! The tandori tofu pizza is great for occasions when you have a bit more time to cook. However, you will enjoy every minute of eating it, we promise you. The topping is where you can let your imagination go crazy. It can be only vegetable-based, but if you want some alternative to mozzarella, for instance, go for tofu. After all, pizza is great whatever you add to it, especially if it is prepared with love!
